Keto Berry Shortcake

I love these keto berry shortcakes because it’s a dessert where I can make all of the components beforehand, and assembly is a snap when it comes time to serve it.

I have some gorgeous organic berries from Sprouts so that I will be topping them with fresh berries. You could also cut them with thawed frozen berries! Raspberries and blackberries are very keto-friendly, so perfect to use for this dessert.

Dairy-Free Whipped Cream

I have a new dairy-free obsession. Silk Dairy-Free Heavy Whipping Cream Alternative! It’s a plant-based, dairy-free heavy cream that tastes SO MUCH like heavy cream! You can use it in place of any recipe that calls for heavy cream. It has 0 carbs, making it very keto-friendly.

The best part? It whips up just like heavy cream does! So you can use it to make a dairy-free homemade whipped cream! I add in a splash of vanilla and a little monk fruit, and you’ve got a keto dairy-free whipped cream that is as light as a cloud and 0 carbs!

Ingredients

Keto Shortcake Biscuits

Dairy-Free Keto Whipped Cream

Toppings

  • 2 cups fresh berries (or thawed frozen berries)
  • sprig of mint (optional)

Instructions

Keto Shortcake Biscuits

  1. Preheat your oven to 350ºF with the oven rack in the middle. Line a baking sheet with parchment paper for easy cleanup.
  2. In a bowl, make the biscuit dough by combining all ingredients and whisking with a fork until combined.
  3. Use a large cookie scoop to scoop out three-tablespoon balls. Flatten slightly with your hand to shape like biscuits. Sprinkle with flaky sea salt.
  4. Bake for 20 minutes, or until set and turning golden brown. Cool on the baking sheet.

Dairy-Free Keto Whipped Cream

  1. In a medium-size mixing bowl, pour in the pint of the Silk Dairy-Free Heavy Whipping Cream Alternative. Use your hand mixer to whip until soft peaks form, about 2 minutes.
  2. Add in the monk fruit and vanilla extract. Continue whipping until soft peaks form, another minute.

Assemble

  1. Assemble by cutting each biscuit in half. Top with the whipped cream, 1/4 cup berries and a sprig of mint.

Notes

Biscuits can be made a few days before and stored in an airtight container in the refrigerator.
